This video is a quick vignette of a delicious take on Baja fish or chicken tacos, but made cruelty-free with mushrooms instead of meat! I added a delicious mouth-puckering lemonade spiced with cayenne to complete my plant-based feast. Probably one of my favorite lunches ever, all from Clover Food Lab inside our local Whole Foods Market! I’m currently obsessed with this Spicy Cold Pressed Lemonade & Baja Mushroom Sandwich from Clover Food Lab at Whole Foods. I’ve probably had it four times in the past two weeks!
We had really nice weather here so having this ‘fish taco’ inspired sandwich was spot on for the high temps and gorgeous sun. If your summer situation calls for lemonade, you really have to try adding a spicy kick to it, it takes the experience to a whole other level! I’m still trying to figure out how to make this taste good at home, but in the mean time this (rather exorbitantly priced) cold press bottle from BluePrint works.
If you don’t eat at your Whole Foods you’re missing out… a lot of them have really fun food stalls inside like the Clover Food Lab in our local store. I would describe them as gourmet vegetarian and vegan fast food with an international vibe and great aesthetic – they have locations in and around Boston, but I haven’t tried them yet.
